Ron Cihuatan Cinabrio 12 Year Rum

Ron Cihuatán is El Salvador's first and only rum distillery, founded in 2004 by Licorera Cihuatán, a division of the century-old Ingenio La Cabaña sugar mill north of San Salvador, in the valley the Maya called Cihuatán. The mill grows the cane, distills the molasses on column stills and ages the rum in ex-bourbon barrels under master blender Gabriela Ayala. Cinabrio is the twelve-year-old in the core range: rums aged a minimum of twelve years in ex-bourbon barrels in the distillery's cellars and bottled at 40% ABV. The name comes from cinnabar, the mineral the Maya ground into the red pigment they used to honor Kinich Ahau, the sun god pictured on the label. The distillery's tasting notes are plum, ripe starfruit, caramelized orange peel, guarapo (fresh cane juice), pistachio and toasted oak, and the rebranded Indigo and Cinabrio pair took Double Gold at the 2020 International Spirits Challenge. The extra four years over Indigo show as more fruit and oak at the same proof, so pour it neat or over a large cube.
