Ron Cihuatan Sahumerio Limited Edition Rum

Ron Cihuatán is El Salvador's first and only rum distillery, founded in 2004 by Licorera Cihuatán, a division of the century-old Ingenio La Cabaña sugar mill north of San Salvador, in the valley the Maya called Cihuatán. The mill grows the cane, distills the molasses on column stills and ages the rum in ex-bourbon barrels under master blender Gabriela Ayala. Sahumerio is a limited-edition blend of four rums, both light and heavy styles, aged between twelve and fourteen years in ex-bourbon barrels and bottled at a higher 45.2% ABV (90.4 proof) than the core range. The name refers to the sacred vessel each Mayan family kept to burn offerings in honor of Chantico, the eagle goddess of fire. Published tasting notes describe fresh orange juice, sweet spice, wood and a creamy coconut and almond-milk character on the nose, a round, caramelized attack that moves into candied orange peel with a little bitterness and an oily texture, and a finish of cinnamon and nutmeg. The extra proof gives it more grip than Cinabrio and the strength to stand up to ice or a stirred drink.
