Solento Organic Blanco Tequila

Solento is the USDA certified organic tequila founded in 2019 by Taylor Steele, the surf filmmaker from Encinitas, who fell for sipping tequila in New York and went to Mexico to find a source, settling on a Tequila Valley distillery with more than six decades of history, NOM 1480. The name joins the Spanish words for sun and slow. It is made in small batches from certified-organic single-estate blue Weber agave harvested at seven years, cooked in brick ovens, roller-milled, fermented open-air in stainless steel, and double distilled in stainless pot stills with copper coils. The Blanco is the unaged expression, bottled at 40% ABV (80 proof) in a minimalist 750ml bottle. Solento describes it as clear and smooth with a silky mouthfeel and subtle notes of Meyer lemon and Tahitian vanilla; Tequila Matchmaker users most often log cooked agave, black pepper and vanilla. It is clean enough to sip neat and makes a margarita taste like agave rather than booze. A nine-month Reposado and an eighteen-month Añejo follow it.
